Hulled Lentils require a very short cooking time. Bothanic name of this pulse derives from its shape similar to a “lens”. Lentils were one the first food ever eaten by humans and one of the smallest ones. They contain more starch and proteins than any other pulse and also a high percentage of iron, calcium, phosphorum, potassium and vitamins A, B and C. Lentils are well digestible and very energetic (more than beans) meal.
